Pancreatic enzymes help break down fats, proteins and carbohydrates. Amylase is an enzyme, a special protein, produced by the pancreas. Amylase breaks down carbohydrates in food into simple sugars, which your body can use for energy. The pancreas also makes lipase digest fats into fatty acids. Then these sugars and fatty acids can then be absorbed by the small intestine. If you don't have enough amylase, you may get diarrhea from undigested carbohydrates.
